Pumpkin SOup

Dearies,

Fall is here and winter is just round the corner and you do see a lot of pumpkins making their debut at this time of the year. So what can be more appealing than a warm bowl of pumpkin soup to shove the chills away. The Ultimate comfort food! YumSs!

In this post I will be sharing with you foodie out there, a special recipe that I've tried a couple of times and without failing to impress each time ;) Go on and get those pumpkins and let's start the ball rolling~

You will need:

1) 1/2 pumpkin (750gm)
2) 3 potatoes
3) 3 carrots
4) 2 big onions
5) 1 cube chicken stock
6) 1 litre of water
7) Salt and pepper to taste

(Except for pumpkins, I'm sure you would already have the rest of the stuff lying somewhere in your kitchen :) super friendly ingredients)

Preparations:

1) Peel the skin for pumpkin, potatoes and scrap clean the carrots
2) Chop pumpkin, potatoes and carrots into small cubes
Tip: Cutting them small into tiny pieces will help to cook and soften it faster, thus cutting boiling time and easier to blend
3) Slice the onions

Cooking time! :)

1) Fry the onions with 1-2 tablespoon of oil until it softens and you can smell the fragrant fried onions

2) Add in the chicken stock and 1 litre of water
Tip: You can dilute the chicken cube with a little bit of water before you add them

3) Add the pumpkin, potatoes and carrots

4) Cover and let it boil for 20 minutes or until the carrots soften
 Note: Carrots take the longest to soften

5) Scoop out the soft pumpkins, potatoes and carrots and blend them until it is smooth.

Tip: (i)Take extra precaution when you are blending hot stuff, blend the solids first and add the liquid    bit by bit, if necessary, remove the small ventilation outlet on top and cover with a towel
         (ii) If you have a small blender, blend the stuff in batches and pour into the pot bit by bit.

6) Once it is smooth like a puree consistency, pour it back into the pot and heat it again.

7) You can start tasting it (the best part ;)) and add salt and pepper to taste.
Tip: Some chicken stocks are so rich in flavour that you do not need to add anything at all, not even salt)

*In addition for a spicier and twist to your pumpkin soup, you can sprinkle cumin or paprika.


Hmmmm the aroma is just soooo heavenly~~~

The best accompaniment to this lovely soup is non other than Croutons!!! My all time fav!

  1. Yay finally the recipe. Was just about to ask you. Unfortunately I didn't grab the pumpkin for the supermarket yesterday.
    Perhaps after the flurry of assignments will try this out, even though winter is over here.
    I guess it will still be great on those cool spring nights! thx
